SPAGHETTI WITH AVOCADO SAUCE

Ingredients:

Avocados (one medium sized per person)
Tomatoes (half a medium tomato per person)
Fresh grated parmesan cheese
Butter
Garlic (half a clove per person)


Method:

While well salted water for spaghetti is heating:
Peel, seed and mash avocados throughly, making sure there are no bad (brown) bits included. The consistency should be creamy.

Put some big dollops of butter in a pan, and as it just starts to brown add the crushed garlic and stir for a few seconds until the garlic just starts to brown then pour the lot into the avocado cream.

Add coarse ground pepper and fresh grated parmesan to the avocado and mix in well.

Pour some of the boiling salted water from the spaghetti into the avocado and mix to a sloppy thin creamy consistency.

Drain the spaghetti and mix in the avocado sauce.

Serve the spaghetti into bowls, pouring or spooning the sauce that remains in the saucepan over the top. Sprinkle the small diced raw tomato over the top.
